Cheesecake redefined

Monotony in caking is a no-no for me!

My philosophy is very simplistic; boring only dulls the taste buds. So I try to take my clients on a cake adventure!

In this event, the client was a good friend whom I knew loved cheesecake. She needed a cake for tea on her birthday. I must admit I have been waiting for an opportunity to try this out. My fear of gaining ‘cupcake-weight’ served as deterrent to not try and taste,but wait for a request like…a birthday cake, that’s not too sweet! I wasn’t quite sure of how to accomplish it.

I do believe that cheesecake should have a little bit more cake. I decided to use it as filling and topping for a vanilla sponge cake. I layered fresh strawberries on the filling and slapped the rest of the cheesecake on top, added strawberries, drizzled chocolate and dusted it with icing sugar (another Martha Stewart-moment!). And yes, you guessed right, it was P-E-R-F-E-C-T!
