Potchefstromers (Spicy scone)

The next recipe is called, Potchefstromers,named after the small university town I hail from in Northwest province, South Africa.

I am not quite sure of the origin of the recipe but it’s popular with all who taste it. It honours all get togethers, from tea time to weddings & funerals. Each person has their opinion on what makes good Potchefstromers. Some add cinnamon/coconut/all spice or all of the above,to give theirs a unique flavour. My mum taught me to bake and hers are of the tastiest around! I even get to critise her occasionally,when it seems like she’s losing her touch!

The batch I made today is for my brother-in-law, for his birthday. He loves them!

6 cups of cake flour
300g margarine
1.5 cups of brown sugar
2 tsp cinnamon
1 tsp salt
4 tsp baking powder
2 eggs
3-4 cups of buttermilk

1. Rub margarine into cake flour, mix should resemble crumbs.
2. Add sugar,cinnamon,salt and mix thoroughly. Add baking powder and let the dry mix run through your fingers as you incorporate baking powder.
3. Mix wet ingredients in a separate bowl, lightly beating the egg.
4. Make a hole in the centre of dry mix and pour half of the liquid. Work carefully and lightly as you start mixing wet and dry. Add rest of liquid to dry mix.
5. Handle the dough as for scones. This results in a soft and well risen biscuit.
6. Use flour to dust and flatten dough lightly by hand. Use a round cutter or a glass to cut.
7. Bake in a pre-heated oven at 180°C until golden brown.


Ensure that there’s adequate space between the biscuits on your baking plate as they rise quite a bit!
